Ginger Coconut Bites

Every Afternoon around 3 o'clock my grumbling tummy makes it announcement that it is time for a sweet-treat and these are a perfect solution.


I am trying to stay on top of my sugar consumption, especially over the next two months! Wedding cake will be flowing heavy here soon and after that the holidays will be before I know it! So alas, here I am trying to be on my best behavior untill then.

With this being said let's talk about this that will get you prepped for fall holidays. I created this recipe to tame my feelings for pumpkin spice (everything) and jumped right into the heavy, yet warming spices. *Pro Tip* = Prep your dates (I do mine the night before!) gather your ingredients, and your spices and makes these in 3 simple steps!....(nutrition facts & product ingredients I used at end of post)

Kitchen tools:

-Food Processor

-9x9 square pan

-Parchment paper

  • Ingredients :

  • 7 oz(s) pitted medjool Dates (soaked in water for at least 30 min)

  • 1/4 Cup of water (^ I use the water that soaked the dates^)

  • 1 cup, Raw (or toasted) Walnuts

  • 1 cup, Raw (or toasted) Almonds

  • 2\3 cup Unsweetened Shredded Coconut

  • 2 Tbsp Ground Flax seed

  • Pinch of Sea Salt

  • Pinch of Black Pepper

  • 1 tsp Ground Cloves

  • 1 tsp Cinnamon

  • 1/2 tsp Nutmeg

  • 1/2 tsp ground All Spice

  1. Toss your walnuts and almonds in the food processor & pulse until they are finely ground.

  2. Add the rest of the ingredients and spices leaving your processor on until thick mixture comes together. Scraping sides down as needed!

  3. ***Note: If your mixture is too sticky add 1 tablespoon of coconut flour or more ground flax seed. If you need more liquid for the mixture slowly add (a spoonful at a time) of water.

Place in a 9x9 square pan lined with Parchment paper and place in the freezer for 15 or untill stiff. Use nice to cut into bite size or even 4 big squares!
