Addicting Banana Bread

"Let't just call it banana cake, cause it feels like such the treat"...But fear not there is No guilt with this recipe.

 

This is a staple recipe in our home. Whenever we have any ripe bananas on hand it's made straight into This banana Bread! Sometimes its even hard to wait for the bananas to ripen just so that I can make it! Paleo person or not everyone loves it.

 

       My favorite thing to do is reheating microwave, taste like they are fresh out of the oven (if you don't gobble them all up on the first day).

Personally love to eat these with some melted (or firm) coconut butter!

I love the brand Blue Mountain Organics becasue they have great tasting butter at an afordable price!

 

      If made into 9 Muffins (or slices) these only contain 3.5 g of sugar! And 8 carbs. 

 With clean ingredients you can feel good about putting in your body, treat yourself to eating 2 or 3 or more!

 

       Recipe :

 

Dry ingredients: 

3/4 cup almond flour 

1/4 cup coconut flour 

1/4 tsp nutmeg (or 1/2 if you like alot of spice)

1/2 tsp cinnamon 

1 tsp pumpkin pie spice 

1/4 cup monk fruit- cup for cup--**if you have small bananas you may want to use 1/3 cup**

3/4 tsp baking soda

3/4 tsp baking powder 

1/2 tsp fine ground pink salt 

(1/3 cup chopped walnuts optional)

 

Wet ingredients:

2 eggs 

1 TBL melted coconut oil 

1 TBL melted butter  

1 tsp vanilla extract 

2 ripe bananas well mashed 

 

Directions:

1) Preheat your oven to 350 degrees F.

2) Start by whisking all your dry ingredients in a bowl. 

3) In a separate bowl mash bananas untill very soft. (I use a hand mixer for this)

4) Next add the rest of your wet ingredients with your bananas.

5) Combine your dry ingredients into the wet mixture. Add slowly (don't over mix) I use a spatula for this part + fold in walnuts if desired! 

            *Over mixing will result in a muffin that will not rise properly when baking. 

6) Makes about 8-10 muffins, Pour in a  greased muffin tin. In 350 degree oven,

Bake for 18-25 min (depends on how much you fill each muffin cup and your oven)

          Just start with 18 minuets and keep checking to play it safe!

 

They should be soft to touch, golden brown on top, check with a knife and it should come out clean. 

 

 

 

Peanut butter drizzle is another favorite combo!
