Warm Salad... perfect for January days. These are some of my favorite Veggies at the moment! Hope you feel inspired to heat up your greens this week. Stay Warm! xoxo- Char
-2 cup Cauliflower Florets
-1/2 tsp Turmeric
- 2 Handfuls Kale
-1/2 Cup green peas (frozen)
-10 Aspargus spears
-salt and peper
Preheat oven to 400 Degrees F.
Start by taking your cauliflower and lightly coating with olive oil and add your turmeric tonic and salt to taste. Place in oven and cook for 25 min.
While cauliflower is roasting Sauté Asparagus and Kale in Olive oil and Steam green peas. After You're all veggies are tender enough for your liking (mine takes about 10 min.) Place in bowl, squeeze fresh Lemon Juice & fresh cracked pepper then toss.
To Fry your egg use the same pan from sautéed veggies & add Ghee (or butter) if needed.
Add your roasted Cauliflower to your greens and place your fried egg in the center! Yumm!
