Corn Bread


Corn Bread Muffins Perfect for Savory Pairings

Makes 12 Muffins

Ingredients:

  • 1/2 Cup Paleo Baking Flour (Bob's)

  • 1/2 Cup All purpose Gluten Free Flour (I use Bob's Red Mill)

  • 3/4 Cup Organic yellow cornmeal

  • 2 TBL Granular Sweetener

  • 3 1/2 tsp Baking Powder

  • 1/2 tsp Sea Salt

  • 1/4 tsp Black pepper

  • 1 Cup unsweetened Cashew Milk

  • 1 large Egg (or 3 TBL aquafaba)

  • 1/4 Cup Oil (or sub unsweetened applesauce)

Flour Brands I used linked below!

1) Preheat oven to 400 degrees F.

2) Whisk your dry ingredients well.

3) Then, add wet ingredients and stir until smooth.

4) Lastly add to a well greased nonstick (12 slot muffin tin) and place in the oven! Bake for 18-25 min.(Depending on your oven/muffin pan)
