Take a break from your "spinclass" at the gym and bring it to the kitchen with these cinnamon pinwheels! Sugar free + low carb. This image speaks for itself.... So let's jump into the recipe...
Dough:
1 1/2 cups almond flour
1 TBL Coconut flour
1 tsp baking soda
1 egg
1 TBL coconut oil melted
1 TBL applesauce
1 TBL Molasses (or maple syrup)
1 tsp vanilla extract
Filling:
1/4 Granulated Sugar free Sweetener (or coconut palm sugar)
1 TbL Cinnamon
1/4 tsp all spice (optional)
1/4 tsp nutmeg (optional)
Directions:
1. Preheat oven to 325 degrees F.
2.In a large bowl combine almond flour, coconut flour, baking soda, egg, molasses, coconut oil, and applesauce, 1 tsp vanilla extract until smooth. Place the dough in the freezer for 10 -15 minutes until firm.
3.In separate bowl combine granulated sweetener of choice and cinnamon (optional spices)
34. Place the dough in between 2 sheets of wax paper form into roughly 8 in. x 12 in. rectangle.
5. Generously Sprinkle the granulated sugar and cinnamon over the rolled out dough. I have attached pictures above-demonstrate on how to use wax paper to roll the dough into a tight rolled log. Then place your "log" in the freezer for roughly 10 minutes to firm again, before cutting into slices.
6. Remove from freezer and cut into 8 equal sized rolls. Place the rolls in any pie dish, with one in the center and the others around it. Bake for 15-20 minutes until golden brown.
**Drizzle with maple syrup, coconut butter, or Icing and enjoy warm! <3**
