No marinating, minimal ingredients, less then 30 minutes....
I usually don't make chicken Breast because I find the meat can be quick to over cook and become dry (no fun for the tastebuds). However that has all changed with this new recipe! Let's get to it...
2 ChickenBreast (4oz)
3 Tablespoons Avocado oil (or olive)
1/2 cup dry roasted cashews
1 small clove garlic (add more if you like a lot of garlic)
Salt and pepper to taste
*optional squeeze of lemon*
Preheat oven to 425 degrees F
In a small food processor (or finely chopped by hand) add the roasted cashews, oil, garlic clove, pinch of salt/pepper. Blend until finely grated.
Place chicken Breast on parchment paper or greased pan, season with salt/pepper first then evenly coat the top with your cashew blend.
Place in oven for 15-18 min. (until your chicken reaches 165 degrees)
Let Rest for at least 3-5 min before cutting into your chicken. Pairs this with a fresh green salad, brown rice or roasted vegetables (my favorite). The cashews create such a beautiful crust. It's a perfect crunch on the first bite and develops into a delicious creamy texture. The garlic is very subtle but gives the flavor more body.
