Yet another Go-To recipe when in need of some comfort food. Growing up I was known as "Carb Queen" aka I loved all starches! After being diagnosed with Juvenile Diabetes slowly I started to refine the way I ate. However, I wont let this disease keep me from enjoying some classic American dinner staples. So I refined my recipe a few times and this one always hits the spot, without the sugar spike of typical mashed potaoes!

What you'll need:
1lb bag of parsnips
1-2 cups Cauliflower florets
1 Tbls Salted Grassfed Butter
2 tsp crushed rosemary (or herb of choice)
Salt/Peper to taste
*Optional Add in 1 scoop of Collagen for a boost of protein and a very satisfied tummy keeping you fuller, for longer!
Trim ends of parsnips (you can peel the skin off if you wish but not necessary) wash thoroughly, repeat with cauliflower if not using pre-cut florets.
Add to pot of boiling water (or broth) for steaming.
Steam until tender with fork (not mush) drain the remaining liquid & rest for 3-5 min.
Add Butter & Rosemary to warm steamed vegetables, the butter will melt as you blend.
Use a hand blender (or food processor) to blend until smooth & creamy, add salt/pepper to taste and you're ready to serve!
