Hi my name is Charlotte and I am addicted to late night treats. It's an on going "issue" and I have have just accepted that if I am going to "treat this issue" then I shall do it with some cookie cake that only has 5g Net carb/square (details bottom of post)
By keeping things lower in carb before bed my bloodsugar remains stable through the night. I get excellent source of Vitamin E + magnesium and Omega-3 fatty acids from the flours used to create this recipe.
P.S. I always save left overs because I LOVE having these out of the fridge...chilled cookie cake... you must TRY IT!!
1/2 cup Unsweetened Applesauce
1 large egg or egg sub (you can also use 2 egg yolks & use the whites for my pancake recipe)
2 tsp Vanilla extract
2/3 C. Granular Sweetener (I use sugar free brand)
1 C. Almond meal
1 C. Bob's paleo baking flour*>Substitution = 1.5 C almond meal + 1/2 C. ground flaxseed
1/2 tsp baking soda
1/4 teaspoon, Sea Salt
1/3 heaping C. (or more) Chocolate chips (I use sugar free)
Preheat oven to 350 degrees F.
Start by whisking applesauce, egg yolks, and vanilla extract in a bowl.
Next add your Sweetener of choice to the wet mixture.
Once well combined Then add ground flax, almond flour, baking soda, & salt.
Last fold in your chocolate chips or chunks of choice.

Place in a greased 8X8 glass Baking Dish or line with parchment. Bake for 25 Min. Let sit for 20-30 min before cutting. I store mine in the fridge these are so delicious when served chilled.
When using the Almond Flour and Ground Flax, I have calculated
Per Square =
Total Healthy Fats 16g (get in my belly)
Total delicious Carbohydrates 12g (yum)
Total of Dietary Fiber 7g (wowza)
Total Sugars 2g (right on)
Protein 6g (keeping us full)
