Natural Jam and Jelly

This recipe is so simple and made with REAL FOOD! I fell in love with blueberries when my mom planted 4 bushes on our family farm, right next to our back door. Every time I was out watering the garden I got to pick a handful and snack while I finished my chores. Sigh...I miss the little farm life...

 

*Mega Beauty Boost!* Blueberries & Beauty go hand in hand. These little berries are rich in vitamins A and C, which are known for receding the development of wrinkles, sagging skin and dark circles! These berries also contain a good amount of H2O, which keeps skin your skin feeling hydrated, bouncy & young looking.

So grab a case of these berries and lets get to the recipe! 

 

 

INGREDIENTS:

  • 2 cups fresh blueberries 

  • 1oz Lemon juice

  • 1/4 tsp lemon zest 

  • 1/4 tsp vanilla extract 

  • 1 tbsp chia seeds

  • 5 TBL water 

  • 2 scoops collagen (optional)

 

DIRECTIONS:

  1. In a bowl add 2 TBL chia seeds with 3 TBL water and let sit for 5-10 min to create a gel like consistency. 

  2. Rinse your blueberries throughly with water and add to nonstick pot with 1oz lemon juice, vanilla extract, and 1 Tbls water. Place on a medium heat and wait for blueberries to soften/slightly burst before mashing with spoon or fork. The longer it cooks the thiner it will become. Don't Rush it with high heat. 

  3.  Once reached the consistency you're happy with add your gelled chia seeds, whisk to combine. 

    • If you choose to add this collagen,whisk as you pour it in, this creates a jelly texture once cooled. Otherwise the chia seeds alone provide a perfect Jam consistency.

    • Allow slightly too cool before Storing in a container for the refrigerator!
