Berry Pasties

 (FYI: a pastie is simply a baked pastry)

For those of you that are Harry Potter fans (such as myself).  Then the word "pasties" will transport you to the Hogwarts express where the term "pumpkin pasties" was first introduced. At the start of his first year Harry bought them from Honeydukes trolley on his way to Hogwarts. I wanted to bring this tasty sugar-filled treat into my kitchen so that I can enjoy a similar experience with the fall inspired flavors I transitioned them using spring/summer produce by using berry filling. Making this healthy, guilt-free and a low carb treat! 

 

On a lazy morning, with a few simple ingredients and my homemade jam this recipe was created! If you are interested in making your own jam with only 3 ingredients check out my recipe here. But, feel free to use ANY jam of your choice. 

 

Ingredients:

  • 1 Cup of Oat flour

  • 1 Cup of Paleo Flour Blend (can sub with rice flour) 

  • 1/3 cup unsweetend applesauce

  • 1/2 tsp Salt

  • 1/4 Cup Cold butter

  • 1 TBL granulated sweetener 

  • *You made need to add ICE water to help the consistancy reach a pie-crust like texture if your butter is too warm. If so add 1 TBL at a time (if need) 

Directions: 

  1. Preheat oven to 350°F

  2. Start by dicing your butter and then put all ingredients in food-processor and pulse/blend until ingredients are just combined.

  3. Using a rolling pin roll out your dough between two sheets of parchment paper roughly 1⁄8th of an inch thick. If your dough becomes too soft, place in freezer to harden and then bring it back out to try again. However, keep in mind it is a delicate dough.

  4. Use any cookie cutter you love! I recommend keeping it small/medium size so that it's easier to move your pasties around. Make matching  top and bottom cuts.

  5. Line parchment paper on your baking sheet and lightly coat with a nonstick spray.

  6. Lay down half of your pastie, spooning 1-2 TBL of Berry jam filling into the center of each shape. Leave enough room to seal the edges (overfilling will cause the crust to split)

  7. Take the other half of your dough matching up with the bottom layer, be gentle. Pressing down lightly on the edges with a fork (or your fingers)

  8. Optional is to brush each pastie with an egg wash, this gives the beautiful glossy finish.

  9. Bake your pasties for 20-25 minutes at 350°F

Enjoy these warm with a Harry Potter Book or Movie! I tend to re-heat my pasties in a skillet on the stove; The butter in the dough will crisp up all over again creating a Fresh crust! But even a chilled pastie is yummy to me​!
