Creamy Spinach Casserole (df/gf)

Do not fear the outer appearance, of this Dish. I can assure you this is the most delicious yet, "not so pretty" casserole.

 

     By using complimentary flavors  to create this dish, you will be going back for 2nds & 3rds for certain! I use a dairy free cheese in this recpie but, feel free to swap with cow's cream cheese if you want. I was inspired from my Mama's recipe but had to put it to the test in my own kitchen. Finding a new way to make this a side dish using real whole foods that my body can use as nourishment.

 

 

 I would love to share with you few facts about spinach, however, if you're just here for the recipe scroll down to the Green Bold letters to get started! 

 

 Spinach might just be my favorite dark leafy green. Why? Well, it's affordable, has a mild flavor that makes it very versatile and available in all markets. Not to mention it's pack with benefits such as lowering blood pressure, because it's high potassium content (aka it helps reduce the effects of too much sodium in the body). Rich in vitamin A, increases sebum production which keeps your luscious hair moisturized! 

 

P.S.  Although not sponsored to say this, I cannot reccommend Jilz crackers enough! They are so yummy! These crackers have been great  for my sugar levels. I have been hooked on them for over a year,  made with minimal ingredients, low carb snack and perfectly crispy! I know they are on the "pricey side" but it has my vote for totally worth it! Ingredients:

  • 2 packs (10 oz each) frozen chopped spinach

  • 2-3 handfuls fresh spinach (optional) 

  • 1 small avocado 

  • 6 oz plain cream cheese (I use plain Kite Hill -dairy free)

  • 1 Large Egg

  • 1/4 tsp black pepper 

  • 1/2 tsp salt 

Topping: 1 Pack Jilz Crackers or any savory cracker crumbs 

 

Directions:

-Preheat oven to 350 degrees F.

-Mix everything (but crackers) in food processor until well combined. Spread evenly in a greased 9X12 baking pan.

-Then crumble crackers on top.

-Bake for 25-30 min.

-Texture Should be slightly firm to touch and dry.

 

Serve warm and with love.

 

Honestly my mouth is watering just thinking of this casserole.
