
Chocolate.Pillow.Cookies. is the Perfect description for these cookies. These are my FAVORITE! okay I know what you're thinking how I say that a lot but I think these are my favorite for spring and summer. Because zucchini will be everywhere this time of year. It's a staple in our garden every summer.
These cookies are delicious on their own and a match made in heaven for an ice-cream sandwich. You and your loves will have No idea there is Zucchini in these cookies. To sum it all up these Taste like a brownie, texture of a cake and bake like a cookie. Now let's get into the recipe.
Ingredients:

1/2 Cup, Paleo Baking Flour Blend
1/2 CUp Almond flour/meal
1/2 Cup Cacao Powder
1/2 tsp Baking Soda
1/4 tsp Salt
2/3 Cup Granulated Sweetener
1 tsp, Vanilla extract
2 Eggs (large)
2 TbL Unsweetened Applesauce
2 TbL Coconut oil (melted)
1 cup Zucchini(Grated ringed out)
Directions
Preheat oven to 350 Degrees and prepare a cookie sheet with parchment paper
I start with 1 med-large size zucchini and grated it very finely (pictured below) and place on a paper towel to squeeze out about 90% of the water out. Then should measure out roughly 1 cup of the grated zucchini. Then and set aside.
Mix all dry ingredients in one bowl and mix my wet into another.
I pour wet into dry and start to mix. Lastly, Incorporate the grated zucchini into the batter. Try not to over mix.
Your dough should be semi-firm like bread batter (not liquid like cake batter)
I use a cookie scooper and place my cookies on a greased parchment paper. Bake for 12-15 min at 350 degrees. Take them out when the tops have set.
Let cool before moving them to a plate (cookies are fragile when warm)
I keep my cookies in the fridge when using them for ice-cream sandwiches. Another option is to drizzle with white chocolate and keep on a glass platter for a all to enjoy! *CLICK* each image for Details*
