I used to (still do) love chewy chocolate-chip cookies! Since I started my slow transition to eating a better nutrient dense food I have gone through so many paleo cookies and you know when you make a batch of "healthy cookies" they tend to turn out dry and crumbly? Well, I have finally formulated a cookie with the perfect chewy texture.. that last!. No drying out, no crumbling, a satisfying feeling, in every bite.
Made with a blend of 3 (grain-free) flours all found at your local grocery store or online (Sometimes I choose to buy through Amazon for a better price)

1 tsp baking soda
1/4 tsp salt
1/2 cup almond flour
1/3 cup coconut flour
1/4 cup. ground flaxseed (flour)
3 tablespoons of milk
2 tsp vanilla extract
1/2 Cup + 2 TBL granular sugar-free sweetener *brand I used below*
5 Tablespoons Cashew Butter (or use roomtemp butter)
1/4 cup unsweetened applesauce
1/2 cup chocolate chips of choice (or more if youre not strict on carbs!)
-In a bowl 1st mix all your dry ingredients flours, baking soda, salt, "sugar" Whisk to combine.
-Then add your wet ingredients egg, applesauce, vanilla, milk, and Nutbutter (or softened Butter) . Mix with a spatula to get everything blended then add in your chocolate chips of choice.
-Use cookie scooper (or 1 TBL and put on a lightly greased baking pan & Flatten with your hand (these do not "meltdown" like other cookies) I photographed example of the flattend shape you want after scooping them out ---v
Bake at 325 for 12-15 min.
When you remove the cookies, let them rest on your baking pan for about 5 minutes before moving to plate...or just eat right off the baking sheet like my husband and I like to do :) If you over bake this can cause the cookie to dry out and you won't have a "chewy texture" sad day... but still yummy.
Makes 18 cookies sized
at 2.5 inches round
