This recipe all started with our deep love of Chocolate Bark. There is a specific brand that sells chocolate bark here in the USA made by “barkTHINS”barkTHINS HERE .…no it’s not the healthiest option on the shelf. But it holds a special place in our chocolate covered hearts... The pumpkin sea-salt specifically. We try not to have it in the house too often otherwise it will disappear in about 2 hours. However on a special occasion we will buy a few bags and indulge. I had the brilliant idea of adding it into one of my favorite gluten free cookies. Now you don’t have to use pumpkin sea salt but, I highly recommend it. Maybe try another chocolate bark if you do let me know in a message
1 cup Gluten Free All Purpose Flour
1 cup Oat Flour (or another cup of G.F. flour)
1/2 tsp Baking Soda
1/4 tsp Salt
1/2 cup+ 3 TbL Room temp. Butter (11 Tablespoons)
1 cup Coconut Sugar
2 Large Egg yolks
1+1/2 tsp Vanilla Extract
A bag of Pumpkin Sea Salt barkTHINS
*optional for varity of flavor* 4 Tablespoons Semi-sweet Mini Chocolate Chips
Step 1: *Wet ingredients* Cream softened butter with coconut sugar then add in the egg yolks + vanilla extract.
Step 2: *Dry ingredients* Whisk oat flour + gluten free flour with salt & baking soda. Using a spatula mix dry into the wet ingredients. *NOTE* Your dough will be pretty sticky...compared to most cookie doughs.
Step 3: Chop your bark thins and try not to eat the bag (like I do)! But add as much as you like. We Like A LOT. If you want add in some semi sweet chocolate too. Mix in your chocolate and refrigerate for a minimum of an hour...I know, I'm sorry. But this effects how the cookie "melts down" in the oven! You can try skipping but I have not tried it before If you do message me HERE and tell me how it turned out!
Step 4: Bake at 350 degrees. Line your cookie sheet with a nonstick lining and press them down with hand (image below). Pop into the oven and Bake for 10 min.
When you remove the cookies from the oven use a fork to gently smash the center of the cookie to get the beautiful crackle tops, creating a insta worth shot📸!
