"Sugar" Cookies (Gluten & nut free)

Because these are sugar free I have to admit I'm guilty for eating one or two right after breakfast! I love a cup of coffee with something sweet. These are perfect for weekday treat, halloween or other event during this time of year. It's always great to have a healthy choice on hand. Made with real ingredients (no need for crazy dyes or harsh preservatives)! These cookies are sure to satisfy your sweet tooth. I made this recipe nut free because I have a few family members that cannot eat almonds or other nut based flours. Plus, I know there are lots of people who have tree nut allergies. It's great to venture out and use new flours in the kitchen! 

 

 Ingredients:

  • 1/3 cup soften butter 

  • 2/3 cup granulated sugar free sweetener 

  • 1 large egg

  • 4 tablespoons pumpkin puree

  • 2 tsp vanilla extract

  • 2 cups gluten free flour (I used Bobs Red Mill, linked below) 

  • 1/2 tsp salt

  • 1/2 tsp baking powder 

 

Directions: 

  1. In a large bowl, mix everything together until well combined. Next place dough into cling wrap (aka plastic wrap) and put in fridge to chill for 10(ish min) While you prep your space for rolling out the cookies.

  2. Using a rolling pin or whatever you have on hand, to flatten your dough out about 1/8-1/4 inch thick.(Thicker the cookie longer the bake time, not a bad thing, just keep that in mind)  

  3. Using cookie cutters that make you happy then move  your cookies to a parchment paper lined baking sheet.

  4. Bake for 10-12 min at 350 degrees!​

5. After your cookies have cooled, I suggest using a buttercream frosting! Using your favorite recipe to keep it totally sugar free or just use a store bought can!

 

These cookies are so healthy so I say feel free to have a "heavy hand" on the icing...or at least thats what I tell myself!
