Thanksgiving is just the start of all the wonderful holiday flavors. Channeling similar flavors of the famous sweet potato casserole this is a much healthier alternative. Serve as a side dish for the next holiday dinner or even just a warm side dish for you and your lover! Some could consider it to be a substitution for that labor intensive sweet potato casserole.I hope you love this as much as I do!
Directions:
Slice the ends off your butternut wash and slice it down the middle. Use a sharp knife to get equal half. *Tip It helps if you choose a smaller squash*
Next give a coating of coconut oil on the fleshy side of your squash, add salt and a good dusting of cinnamon.
Cook face down baking pan (use Foil lined for easy clean up) at 400 degrees for 30-45 min. depending on the size of your squash!
You know it's done when you can use a knife to easily pierce through the skin.
Once removed from the oven carefully flip over and Drizzle with your favorite nut butter. I like to use one that has a blend of clover honey, almond and cashews! You can buy this at Sprouts, Target or online. Then fill the inner cavity with your toasted mixed nuts and a sweet granola!
