Chewy Gingerbread Cookies vegan option

These cookies smell and taste like Christmas morning! I love to have these in our cookie jar during the week of Christmas, because they're filled with simple wholesome ingredients that taste delicious. Pour yourself a glass of cold (no cow) milk or hot chocolate and enjoy 2 or 3! Feel free to use your favorite icing to decorate if you wish. But make sure to decorate after they have completely cooled so you're icing doesn't melt. I wish you and your family a happy and healthy Christmas!

the Best homemade gingerbread cookies

for our family, every single year! 

 

Ingredients:

  • 1 1/4 Cups Paleo Baking Flour (Bob's Red Mill) 

  • 2 tsp Ground Ginger

  • 1 tsp Ground Cinnamon

  • 1/4 tsp Ground Allspice

  • 1/8 tsp Ground Black Pepper

  • 1/8 tsp Ground Clove

  • 1/8 tsp Ground Nutmeg

  • 1/4 Heaping tsp Baking Soda

  • Pinch of Salt

  • Pinch Black Pepper 

  • 6 TBL Softened Butter (OR vegan butter) 

  • 3 TBL Black Strap Molasses 

  • 1/3 Cup Brown Sugar (I used swerve)

Directions: 

-Preheat oven to 325 degrees F

-Mix all your dry ingredients in a bowl. I highly recommend sifting your flour & baking soda into the bowl. This avoids any flour clumps in your mix.

-In a separate bowl, cream your butter, sugar and molasses. I did about this for 2-3 min until it was well combined and fluffy.

-Then add your flour to wet batter in 3 sections. This is to avoid a mess with the hand mixer and ensures you will have a well blended dough without over mixing. 

-Form into a ball and chill in fridge for about 5-10 min. Prepare baking pan (and sprinkles) during this time. 

-Roll out cookies about 1/4 inch thick and lay on a parchemnt paper or lightly greased cookie sheet. 

*tip* if you want to decorate with sprinkles, add on top of dough before baking! 

- Bake at 325 F. for about roughly 10-12 min. *This really depends on your oven and your baking sheet. So check at 10 min and be careful not to over bake. You want the cookie firm to touch / should be able to freely slide it on the baking sheet without sticking.

 

Let your cookies cool and then decorate with your favorite Icing if you wish!

 

P.S. you can save half the cookie dough (keeping in wax paper in the fridge)

& make reserve a batch of cookies so that you can have fresh gingerbread on christmas morning!

These cookies have a beautiful flavor of blackstrap molasses. Eating this ingredient on its own is... not so tasty but, when used in baking recipes I love the flavor it provides!
