Quick Winter Medly

 

This is such a beautiful dish that requires minimal effort, week-night dinner win! These contrasting flavors pair incredibly well together. Ingredients filled with so many beautifying benefits sharing those Here on my instagram post. Stars of the show are two winter veggies on sale most everywhere, kale and sweet potatoes! Mixing in organic sausage and roasted pistachios this dish really stands out, onto the recipe... 

 

 

 

*Notes* Feel free to sub the sweet potatoes for white potatoes! You also can try out different types of sausage. I personally like to use an organic pork sausage in this recipe due to the oil it provides when cooking kale. See directions below!

*Serves 2-4 

 

Ingredients:

  • 8z ground sausage (more or less)

  • 2 cups peeled and cut sweet potatoes 

  • 4 cups fresh kale 

  • 1/4 cup roasted pistachios

  • salt and pepper 

  • 1-2 TTBL Oil

 

Directions:

Preheat oven to 420 degrees F.

  1. Start by lightly coating your cubed sweet potatoes in oil, salt and pepper. Spread on parchment paper and bake in an oven at 420 degrees for roughly 20 min. 

  2. In a stove top pan cook your ground sausage until well done. (I like to use a pork breakfast sausage that has flavors of thyme & sage. I use pork because it provides the oil needed for the next step. But feel free to use any meat/flavor you love.

  3. Remove sausage from pan and use the leftover oil to cook your kale. The four cups of fresh kale will dramatically reduce. If you need more moisture to wilt your greens add a spash of oil or water. 

  4. Time to plate! I start by laying down the kale, then adding my sausage and last the sweet potatoes. I love adding roasted (salted) pistachios. They bring a pop of color and a delicious crunch!
