Brownies (with cocoa powder)

These remind me of the boxed brownie mix I ate growing up. Which means No need to melt down chocolate, only cocoa powder needed. These have that perfect fudge like texture and are made with real, simple, ingredients.  Brownies are B.A.E. (Before Anything Else). Am I right? Chocolate chip cookies may tie with a good brownie. But today, it's all about my perfected paleo brownies! 

 

*NOTE* If you use a sugar-free sweetener, such as the brand Lakanto(which is what I recommend) you don't need as much compared to a coconut sugar. However, if you choose to use coconut sugar then I recommend 1 cup. I have found coconut sugar is less-sweet then monk-fruit. Also by using a high quality cocoa powder this will determine the color and intense chocolate flavor of your brownie. I have used Hershey's and a dutch processed (linked below) I personally like the dutch better! 

 

Now that we know this, Let's get into the recipe: 

 

 Ingredients

  • 3/4 cup Granulated Lakanto *Or use 1 cup of coconut sugar*

  • 2/3 cup cocoa powder 

  • 1/2 tsp salt 

  • 1/2 cup butter (1 stick) 

  • 2 med eggs 

  • 1 tsp vanilla extract

  • 1/3 cup Paleo Flour Baking Blend 

  • Optional is adding in chocolate chips, nuts etc.! 

Directions:

  1. Start my mixing the "sugar" cocoa powder, and salt in a bowl.

  2. Next melt 1 stick of butter on the stove or microwave until it is simmering hot, let slightly cool off. 

  3. Add to your dry ingredients and mix well. 

  4. Add eggs and vanilla extract and blend on high for 2 min. (this will help achieve the shiny top)! 

  5. Last fold in your flour and try not to over mix. Optional Add in chocolate chips, sprinkles or whatever make you most happy! 

6. Spread in a 8X8 square baking dish and lined with foil or parchment paper. Make sure to spray or coat with oil or butter as well! 


Bake at 350 for 25-35 min. Do NOT OVER BAKE. Or your brownies will become a brick. Check with a tooth pick at 25 min. Should come out with a little batter.  *If using Lakanto it will only become firm as it cools down. Brownies are a little "jiggly" on top when you pull them out, don't worry too much.Also if you reheat it in the microwave the" fudgieness" will return! 

 

 

*another tip to ensure you have a shiny top brownie is to shave milk chocolate on top of the brownies before baking. I use a Lily's Milk Chocolate Bar. When it melts down in the oven it creates the glossy texture we all know and love.
