Three cheers for nice cream! You may be asking what is "nice cream" ? This concoction has simple ingredients that create an ice cream like texture and flavor which delivers a "nice" alternative for your body. The base is frozen bananas! I like to make this in a single serve batch so I can carb count my fruit (type one diabetic things). This has been our go-to treat over the past year and we're carrying on the tradition!
What's in it:
2 frozen bananas (chopped up)
1/2 tsp vanilla extract
2-4 tablespoons of dairy free milk (or any milk)
1 handful or 2 of mini chocolate chips
*optional* use my beauty bites and coat them in chocolate! Then use them as a topping or break them into pieces and blend in at the last few seconds. Or add in Penuts, almonds etc.
Using browned bananas (really important). Next time you have browning bananas on the counter, DO NOT throw them out! Just peal, break in 4 sections or cut into "coins". Place them in a ziplock bag and Toss them in the freezer until your ready for this treat! Also, it is important that they are frozen solid otherwise you will have quite the melty mess.
I like to make this in my small food processor but I have used a blender as well (a bit more time consuming but can be done). Another suggestion is top with fresh strawberries or a pinch of cinnamon to create different flavor profiles.
Put everything in processor or blender then add 2 tablespoons of milk at a time. Use the pulse setting untill things start mixing together. Carefull not to add too much milk or you will then have...a smoothie haha. Still yummy though!
Hope I have encouraged you to pick up some extra bananas at the store this week
and skip the pints of icecream. Save that sugar filled stuff for every once in a while
