This recipe is my favorite way to enjoy a veggie burger!
It's very affordable, easy to make and it has the hubby's stamp of approval. Hooray! I like to give him a double stacker, loaded with a slice of tomatoe, avocado, slice of "cheese" and don't forget a paleo bun! Another idea is to place on a bed of leafy greens or put it in a wrap!
I have always loved a good veggie burger and wish I would've started making my own sooner! They're so good for you and better tasting than any store bought ones (that I have tried)!
Since going 95% plant based this past month I've started experimenting with different plants and this is one of my favorite recipes so far.

Makes 4 large patties
1 can Organic Black beans
1/4 cup Quick Cooking Oats
1 Yellow Bell Pepper (roasted)
3-4 stalks Green Onion
2 large Garlic Cloves
1 tsp Old Bay Seasoning
1/2 tsp Cumin
a pinch of Cayenne or Chili Powder (FYI chili powder is "hotter" than cayenne)
1/2 tsp Salt
1/4 tsp Blackpepper
Drain and rinse black beans then set aside
Chop green onion and mince the garlic and finely dice your roasted yellow pepper
In a bowl start by mashing your black beans until you have 90% mushy. It's okay to have a few lose beans, this give a great texture.
Add in the rest of your ingredients and stir until well combined.
When cooking fresh place on a non-stick pan and bake at 400degrees F for 20 min or until edges are crispy. You can also cook this in a skillet on the stove: Cook until heated through/crispy edges!
