
This recipe is my favorite way to enjoy a bean burger!
It's very affordable, easy to make and it has the family's stamp of approval. Hooray! You can enjoy this patty on a bun, like a traditional burger or another idea is to place on a bed of leafy greens (my favorite).
I have always loved a good veggie burger and wish I would've started making my own sooner! They're so good for you and better tasting than any store bought ones (that I have tried)!
Since going plant based this past year I've started experimenting with different plants and this is one of my favorite recipes so far.
Ingredients:
Makes 4 large patties
1 can Organic Black Beans
1/4 cup Quick Cooking Oats
1 Yellow Bell Pepper (roasted)
3-4 stalks Green Onion
2 large Garlic Cloves
1 tsp Old Bay Seasoning
1/2 tsp Cumin powder
Pinch of Cayenne or Chili Powder (FYI chili powder is "hotter" than cayenne)
1/2 tsp Salt
1/4 tsp Blackpepper
Directions:
Drain and rinse black beans then set aside
Chop green onion and mince the garlic and finely dice your roasted yellow pepper
In a bowl start by mashing your black beans until you have 90% mushy. It's okay to have a few lose beans, this provides a great texture.
Add in the rest of your ingredients and stir until well combined.
*If your mix is too dry then add a couple tablespoons of water. If your mixture is too wet then add more oats*
When cooking fresh place on a non-stick skillet (you can use a small amount of oil if you need) and cook on medium head for 5 min each side or until heated through with crispy edges!
You can save these in the fridge for up to 5 days or you can place them in the freezer! If cooking from frozen it will just extend your baking time.
