We will be eating thanksgiving inspired food from now through Christmas! Sweet Potato Casserole being one of my favorite sides! Thought to be an "indulgent" recipe, but not in our house. This is just another cozy dish made so often during the colder months that we enjoy it for breakfast, lunch, or dinner. I like to make my casserole with simple ingredients, warming spices, and a delicious crumble topping. Creating a nourishing healthy side to have nothing but positive effects for your beautiful body.

Serves 4- 6 people. Perfect for a small household for leftovers.
2 large sweet potatoes (4 cups large chunks)
1/3 cup almond milk
1 TBL ground flaxseed
1-2 TBL maple Syrup
1 TBL fresh orange juice
1 tsp cinnamon
1/4 tsp nutmeg
1/8 ground cloves
1 tsp maca powder (optional)
1 tsp salt
1 cup chopped peans
1/2 cup oats
1/2 tsp cinnamon (or pumpkin-pie spice)
2-3 tablespoons coconut sugar (or brown sugar)
pinch of salt
1 Tbl oil or melted butter
Preheat oven to 350 degrees F.
Peel and roughly chop potatoes. In a large pot of water boil potatoes until fork tender. Drain well.
Using a hand mixer start whipping the potatoes. Add in milk, juice, and all the spices, until well combined.
Place in a nonstick 8X8 square pan.
In a separate bowl mix your crumble topping and the cover your sweet potatoes.
Bake at 350 for 20-30 min.
