"cheesy" Cauliflower Soup

I love having a large bowl of good soup during the chilly months. Our apartment is quite small, and when the weather is bitter cold outside, you will find us taking about 90 steps in a day inside the apartment...Whoops, I think we may be a little off from the "10,000 goal!" On lazy or sick days, this soup is perfectly nutritious, warming and goes great with warm biscuits or cornbread!

The rich color of this soup comes from orange cauliflower! They sell this in almost every grocery store. If you didn't know, cauliflower comes in a variety of colors; purple, orange, green and the most common white. Beauty Booster? You bet! Cauliflower aids in building stronger bones thanks to its high contents of Vitamin K.

This soup has been a hit with everyone I know. Even my little nieces love it at Thanksgiving. A great idea is to serve it as an appetizer, for your loved ones during the Holiday season. With a smooth texture and a "cheesy" flavor, you will be going back to this recipe again, and again.


  • 1 Med-large head of Orange Cauliflower

  • 4 cups veggie broth (or chicken broth)

  • 4 tablespoons Nutritional yeast (or finely grated parmesan cheese)

  • 1/2 tsp Dijon Mustard

  • 1 tsp Salt+ 1/2 tsp Pepper (more or less to taste)


  1. Start by cutting your cauliflower into florets. (You can save the leaves and sauté them in olive oil if you want to create a pretty display when serving your soup!)

  2. In a large pot add florets and chicken broth and bring to boil. Cover with lid and reduce to simmer for about 15 min until the cauliflower becomes soft to touch with a fork. Let cool/safe to handle and add the contents (broth included) into a blender. You can do this in sections if needed.

  3. *Or you can keep everything in the same pot and use a hand blender! Also known as an immersion blender, I have one linked below!

  4. Once you have a creamy texture, then Add in your nutritional yeast, dijon mustard, salt & pepper and blend (or stir).

All done!

I pour my husband and I each a bowl straight from the blender then add the rest back to the same pot and keep warm on the stove.

Enjoy this with my warm biscuits or corn bread, yummy!
