Simple Chocolate Cake: no dairy or eggs

I made this simple plant based cake for many birthday celebrations and it is adored by all! This recipe uses simple ingredients making is so easy to bake and taste absolutely delectable! I have received request from multiple friends and family members (that are by no means plant based) that want this cake served on many different occasions. The good news for you, me and my friends is this recipe produces a relatively healthy chocolate cake.

My recipe includes an organic flour, organic coconut sugar sugar and "butter" aka dairy-free butter (or you can use grass-fed butter or even oil see notes below) because let's be real... I still want to have CAKE for my birthday. You know what I mean? These ingredients can be considered a very healthy option compared to most cake recipes. I used a sprouted-spelt four because I didn’t want to compromise the texture and prefer "butter" over oil to provide a rich flavor. Feel free to use equal parts oil to replace the butter if you’d prefer. Look below the ingredients for more tips/notes! Lets get to the recipe shall we?!

This recipe makes ONE 9" round cake layer or two 6" round cakes

Ingredients:

  • 1/4 cup cocoa powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup coconut sugar + 1/4 cup lakanto sweetener*

  • 1.5 cups sprouted spelt flour*

  • 6 Tablespoons butter (or oil)

  • 1 Tablespoons Apple Cider Vinegar

  • 1.5 teaspoon vanilla extract

  • 1 cup water

*TIPS*

*You can use all coconut sugar or even an organic cane sugar if you prefer.

p.s. I don't recommend doing all lankanto because it will give the cake a "crunchy" outer texture when cooled.

* Don't "pack" the flour in your measuring cups but spoon it in lightly! This will avoid having a dry cake

Directions:

Mix all your dry ingredients in a bowl with a whisk then add your wet ingredients and stir with a spatula until all the lumps are gone. Try not over mixing. Prepare cake pan, I like to add a light coating of non-stick and a round piece of parchment paper to ensure that my cake will come out easy!

Pour in 9inch round cake tin and bake at 350 for 25-30 min. Once a toothpick comes out clean you'll know they're done. Set on a cooling rack for 10 min. before removing from cake tin.

Frost your cake when it's reached room temperature. I have a super HEALTHY and DELICIOUS frosting recipe below!

Superb Healthy Chocolate Frosting recipe:

Ingredients:

  • 2 cups of steamed sweet potatoes

  • 1 cup cocoa powder

  • 1/4 cup + 2 tbsp maple syrup

  • 2 TBL avocado or just 1/4 of an avocado

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • If you need it sweeter try adding in liquid vanilla stevia drops or maple syrup until your sweet tooth is satisfied. I used this brand.

Directions:

Add sweet potatoes and avocado in food processor and run until everything is smooth.

Then add the rest of your ingredients and taste! adding in a small amount of liquid stevia as needed.
