Roasted Red Pepper Hummus

Grab your blender, a few pantry items and you're ready to go! This is our Favorite hummus recipe. We use it as a dip for all the veggies, slather it in sandwiches and chip dipping of course! Hope you like it as much as my Family does!

In the Blender:

  • 1 Can Chickpeas (15 oz)

  • 1/2 cup tahini

  • Juice of 1 small Lemon

  • 1 red pepper

  • 1/4 cup warm water (more if needed)

  • 1/2 tsp sea salt (more if needed)

  • 1/2 tsp. cumin ground

  • 1/4 cayenne pepper

  • 1/4th tsp garlic powder

Directions:

Start with your pepper, remove the stem and seeds and roast the pepper at 400 degrees for about 20 min or until lightly charred/very tender.

Note: I usually do go ahead and roast with other veggies and I will set the pepper aside for later in the week or I will just pop it right into the blender for hummus.

Drain chickpeas and add to the blender. Add the rest of your ingredients and blend until smooth. For me it takes about 2 min. on a med-high setting. Add salt to taste and use right away or store in the fridge and eat cold throughout the week.

Hope you enjoy my hummus recipe, and don't forget to tag me in your post if you make it!
