Simple Granola Recipe

I almost always have this in my pantry! I love having my own granola to mix with other store bought cereals. By making my own I am able to control how much processed sugar I consume.It is fun to customize the ingredients each week and provides my smoothies with a nutritious crunch topping. You can also add this to Anything and everything, seriously... smoothie bowls, sweet potatoes, even nice cream! I hope you enjoy it as much as I do, xoxo.

NOTE** Don't be afraid to experiment with different nuts or seeds and find what fits your fancy.

  • Ingredients:

  • 3/4 cup unsweetened coconut flakes

  • 1 cup whole oats

  • 1 cup raw unsalted nuts (my favorites are hazelnuts, almonds, and pecans)

  • 1/2 cup cacao nibs

  • 1 TBL ground flax seeds

  • 1 tsp whole flaxseeds or hemp seeds

  • 1 TBL chia seeds

  • Pinch of nutmeg (fresh ground if on hand)

  • 2 tsp ground cinnamon

  • 1 TBL cocao powder

  • 2-3 TBL melted coconut oil

  • 1 tsp vanilla extract (to taste)

  • 1 dropper full of liquid sweet-leaf stevia Chocolate or Vanilla (or you can use stevia packet)

1 TBL maple syrup (optional if not using stevia drops)

**Makes 2 heaping Cups of Granola**


1) Preheat oven to 275 degrees F.

2) Measure nuts and roughly chop to your liking, If using pre-chopped nuts omit this step.

3) Use large bowl and add all your dry ingredients mix well, then melt coconut oil and add vanilla extract and stevia drops (or maple syrup) and stir.

NOTE* If you need to add more oil you can just be careful not to over soak your granola, add just enough to coat everything evenly.

4) Spread evenly on a baking dish and place in the oven! Flip your granola every 8-10 min. Bake for roughly 22- 30 min. You decided how toasted you wish your granola to be. I like 30 min, nice and toasty. Remove from oven and let completely cool on baking pan before storing away.

Keep your granola in a glass jar, oh how trendy you'll be! *or place in tupperware, or a bag too if thats more convenient*

Keep it in on the counter or fridge or the freezer or all 3! Just see what you like best!
