Turkey Meatloaf Seriously Amazing

I bet you that this will beat your Mama's meatloaf. A bold statement to say this for this recipe but, there are no crazy fillers or questionable ingredients in this recipe.

I sneak in some veggies and create a meatloaf that is so delicious and not dried out. You will be left wanting to serve it for your next dinner party. I use ground turkey which can commonly create a dry texture. However, I have found the key to a perfect flavor, mixing white and dark turkey meat to give your dish more flavor and keep everything moist so there will not be any need to over soak your dish in added ketchup. Trust me on this one and give it a chance, now let us get to the recipe...


  • 1lb Ground Turkey (I blend 50% White + 50% Dark for the BEST flavor)

  • 1 egg (slightly beaten)

  • 1/3 cup favorite gluten free cracker crumbs (I recommend Cheese crackers)

  • 1/4 cup quick cooking gf oats

  • 1/2 TBL Worcestershire sauce

  • 3 TBL ketchup

  • 1 heaping tsp of minced garlic

  • 1/4 of a yellow sweet onion finely diced

  • 1/4 tsp black pepper

  • 1/2 tsp Salt

  • 1 Large carrot (add last)

  • 2-3 handfuls Spinach (add last)

  • *optional 1/3 cup hard grated cheese. I like organic goat cheese

  • 2 slices of bread (I use paleo bread)


  1. Preheat oven to 350 degrees (cook time 30-40 min)

  2. Start by creating cracker crumbs, I use a small food processor to create a bred crumb texture.

  3. In a large bowl add your ground meat (.5lb light + .5lb dark meat), slightly beaten egg , minced garlic, diced onion and all the other ingredients But wait to add carrot and spinach. Mix with your hands (it's the quickest method).

  4. Grate carrot directly into the bowl, along with a handful of roughly chopped spinach and grated cheese if you desire. Mix again until evenly distributed.

  5. On a large sheet pan spray with nonstick and place two slices of bread on your pan (pictured below) arrange your meat on top. ​

*This step helps absorb any added oils creating a "clean finish" instead of a greasy mess when taking it out of the oven. Plus it provides a crust texture under your meatloaf. My husband and I love it!

  1. Bake meatload at 350 for 30-40 min (when internal temp reaches 165 it's done!)

*For a quick glaze on top I mix together:

  • 1TBL ketchup

  • splash of Worcestershire sauce

  • 2 tsp of melted butter (or ghee)

**Stir until well combined and spread it on top of meatloaf before cooking or at the end and place under broiler for 3-5 min**
